I am obsessed with fajitas. Chicken and steak fajitas are my favorites, and I’ve been making them all sorts of ways to find the perfect fajita. I am happy to say, I have finally achieved the perfect fajita. And you will not believe how EASY it is!
You’ll need an onion, a couple green bell peppers, about 3 chicken breasts, and some Saute Express Southwest flavored Saute Starters. And don’t forget the tortillas!
I made this recipe in my Ninja 3-in-1 cooker, on the Slow Cooker setting, but any slow-cooker will do.
Slice up your onions and place them in the bottom of your slow cooker.
Then slice your peppers and add them.
Then add your chicken. My chicken breasts were still frozen, I took them right out of the freezer. I actually prefer using frozen chicken, because as they thaw out, they add a liquid to your slow-cooker, which is necessary if you want the chicken to be really tender. If you don’t use frozen chicken, I suggest adding about 1 cup of water to the cooker.
And here’s what makes this dish AMAZING. Add 4 squares of Saute Express Saute Starters in the SOUTHWEST flavor to the cooker. You will not need to add any more seasoning!
Turn your cooker on low for 8 hours. Once the Saute Express Saute Starters start melting, give it all a stir and leave it.
After about 7 hours or so, you’ll want to shred your chicken. If you have a stand mixer, just place the chicken in your mixing bowl and using your paddle attachment, let it do all the work for you! Seriously, this is the EASIEST way to shred chicken ever!
Place your shredded chicken back into the slow cooker, give it a stir, and let it keep cooking for the last hour or so.
Warm up your tortillas and serve! Add whatever toppings you like on your fajitas – cheese, sour cream, etc.
And devour.
And for the record, I will be trying this exact recipe with home fried taco shells next week!
