My boyfriend has been on a serious weight loss mission, and he’s doing so awesome. In just a month he’s lost over 30 lbs through healthy eating & daily exercise.
This is a dish he came up with, and he loves it. It’s super simple and I thought I would share it with you in case you’d like to try it. He just calls this “ground chicken with green onions” but also adds other things to it sometimes, which I will share at the end.
First, he cuts his green onions into small pieces.
He then cooks them a bit. We use our Gotham copper pan, which we pretty much use for everything now. If you haven’t tried one of these pans, you need to. You will wonder how you ever lived without it.
After a few minutes of cooking the green onions, add about a tablespoon of minced garlic.
Let them cook a few minutes and then add your chicken. He cooks 2 lbs of 92% lean ground chicken. You could also use ground turkey, which he alternates with.
Cook until your chicken is fully cooked. It doesn’t take long, as the chicken cooks very quickly.
Can you see the liquid in the bottom of the pan? Grab a strainer and drain the fat from the pan. Then put the chicken back in the pan and continue to cook for just a few more minutes.
Add your salt & pepper.
(He likes a lot of pepper!)
He then poured this into an airtight container, and as soon as it cools down, it will go into the fridge and he will eat it throughout the week.
You can eat this several ways – as a sandwich, in a flatbread wrap, or just like this – but his favorite way to eat this is in a lettuce wrap.
Feel free to add other items to it, too. He sometimes substitutes the ground chicken with ground turkey, and he often adds bell peppers, red peppers and even salsa.
If you live near a Wegmans grocery store, I’d also recommend using this on their Pop Cakes. If you don’t have a Wegmans nearby, you can purchase them from Amazon. I use them in place of bread for lots of different sandwiches. They are delicious and excellent for dieting.
And Chris also steams broccoli or asparagus and has that as a side dish with it.
First, he steams it.
Then he cooks it for just a few minutes in the pan.
Add salt & pepper and you’re done.
He also places these in his “portion control” containers. He splits this up between 2-3 meals with his ground chicken wraps.
He loves this meal and it is satisfying for him. He brings it to lunch with him every day with an apple & a string cheese, and sometimes a yogurt. He has a very physical job, and still exercises every night when he gets home from work. And, it’s working so well for him.
